There's no single measurement that suits every home, but over a kitchen island I generally aim for the bottom of the pendant to sit around 750 to 900mm above the benchtop. That provides good task lighting without blocking your view across the room. Over dining tables, the height is usually adjusted to suit the size of the pendant and the proportions of the space.
